weight and $50.00 kill fee per animal. Average Price per lb handing weight is $3.75 lb. From hanging weight to packaged weight
you usually lose about 30% The Highlands are small cows so an entire animal usually hangs around 300 Lbs. and packages out
at 200 lbs. of meat. Out of the packaged weight approximately 26% ground beef and 74% are premium cuts. Of the premium cuts
about 25% are steaks (sirloin, t-bone, rib eye and sirloin tip) 25% are roasts (chuck, check arm, rump and round roasts) and the
other 25% is a mixture of ribs, round steak, stew meat and soup bones. The average price per Lb of processed beef is around
$5.50 lb. once everything is cut and in your freezer. YES, it is a good deal and it is actually Good for you!
